4 Eggs
¼ teaspoon salt
3-4 tablespoon butter
1 medium onion sliced
3 garlic cloves chopped
1 cup bell pepper sliced (use a mix of colorful bell peppers if possible)
3 tablespoon tomato sauce store bought
1 serrano pepper cut in rounds, adjust to taste
2 tablespoon cilantro
Spice Blend
½ teaspoon red chili powder adjust to taste
1 teaspoon cumin powder
½ teaspoon kala namak indian black salt
1 teaspoon garam masala
½ teaspoon black pepper powder fresh ground
Start by boiling the eggs. Please refer to the post for my tips on boiling eggs.
While the eggs are boiling, you can chop the garlic and slice the onions and bell peppers. Also prepare the spice blend .
Once the eggs are boiled, cool them and peel them. Using a sharp knife, cut the egg into halves.
In a large cast iron skillet or tawa, on medium heat, melt the butter. Layer the egg halves cool side down. Sprinkle ¼ teaspoon salt to season the eggs.
Without disturbing, let the eggs fry for 3-4 minutes until the yolk and egg edges are golden. Using a flat spatula or a large spoon, flip the eggs and let fry on the other side as well.
Once the eggs are nicely fried, add garlic, onion and bell pepper, serrano all at once and using a spatula gently mix for 10-20 seconds.
Sprinkle the dry spice blend and tomato sauce. Gently mix and continue frying fir another 30-40 seconds or so taking care as much as possible to not pop out the yolks.
Finish with chopped cilantro and if you want you can add extra butter. Serve immediately.
Variations
Make Them Cheesy - You can cover the finished dish with shredded cheese and broil until cheese melts.
Use Tofu for Vegan and Paneer for Vegetarian Version- If you dont eat eggs or want to serve this to vegetarians, replace eggs with extra firm tofu, mushrooms or paneer in this recipe.

Stir gently at all times. A flat spatula works best. I usually turn over the eggs and peppers a few times instead of stirring (like you would stir a sabzi) to make sure that the yolks dont pop out. Even if they do, since we nicely golden browned them, they are not going to break.
A well seasoned heavy cast iron skillet is better compared to a non stick pan, it imparts a nice charred taste.
You can use avocado oil or any neutral oil instead of butter.
Make sure that you prepare everything ahead. Once the eggs are golden, the stir frying takes only a minute or so.
